Preparation
- Preheat your oven to 425°F (220°C). Grease your ramekins with butter and lightly dust them with flour. Prepare a baking tray.
- Melt the butter and chocolate chips in a microwave-safe bowl, stirring every 30 seconds until smooth.
- In another bowl, whisk together eggs, egg yolks, and granulated sugar until slightly thickened. Blend in the melted chocolate mixture.
- Sift the flour and salt into the batter, folding gently until no flour streaks remain.
- Divide the batter among the greased ramekins.
Baking
- Bake for 12-14 minutes until edges are firm but the center is soft.
- Let them sit for 1 minute, then carefully invert each onto a serving plate. Dust with powdered sugar and serve with vanilla ice cream if desired.
Notes
Avoid overbaking for a gooey center. Can prepare batter ahead and refrigerate for up to 24 hours before baking.
