Ingredients

Dry Ingredients
  • 2 cups all-purpose flour for a soft and fluffy texture
  • 1/2 cup cocoa powder adds rich chocolate flavor
  • 2 teaspoons baking powder helps muffins rise
  • 1/2 teaspoon salt enhances sweetness
  • 3/4 cup sugar provides sweetness
Wet Ingredients
  • 2 eggs for binding and richness
  • 1 cup milk keeps muffins moist
  • 1/3 cup vegetable oil adds moistness
  • 1/2 cup peanut butter adds creaminess and flavor
Additions
  • 1 cup chocolate chips for added chocolate goodness

Method

Preparation
  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, whisk together all-purpose flour, cocoa powder, baking powder, salt, and sugar until well combined.
  3. In another bowl, mix together the eggs, milk, vegetable oil, and peanut butter until smooth.
Cooking
  1. Pour the wet ingredients into the dry ingredients and stir until just combined. Avoid overmixing.
  2. Fold in chocolate chips until evenly distributed throughout the batter.
  3. Divide the batter into the prepared muffin tin and fill each liner about 2/3 full.
  4. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean or with just a few crumbs.
Serving
  1. Remove the muffins from the oven and let them cool in the tin for 5 minutes.
  2. Transfer the muffins to a cooling rack to cool completely before serving.

Notes

For extra moist muffins, do not overmix the batter. Store muffins in an airtight container to maintain freshness. Add a sprinkle of sea salt on top before baking for a sweet and salty contrast. Substitute peanut butter with almond butter for a different nutty flavor. Consider adding crushed nuts for an extra crunch.
