Preparation
- Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
- In a large bowl, whisk together all-purpose flour, cocoa powder, baking powder, salt, and sugar until well combined.
- In another bowl, mix together the eggs, milk, vegetable oil, and peanut butter until smooth.
Cooking
- Pour the wet ingredients into the dry ingredients and stir until just combined. Avoid overmixing.
- Fold in chocolate chips until evenly distributed throughout the batter.
- Divide the batter into the prepared muffin tin and fill each liner about 2/3 full.
- Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean or with just a few crumbs.
Serving
- Remove the muffins from the oven and let them cool in the tin for 5 minutes.
- Transfer the muffins to a cooling rack to cool completely before serving.
Notes
For extra moist muffins, do not overmix the batter. Store muffins in an airtight container to maintain freshness. Add a sprinkle of sea salt on top before baking for a sweet and salty contrast. Substitute peanut butter with almond butter for a different nutty flavor. Consider adding crushed nuts for an extra crunch.
