Preparation
- Preheat the oven to 350°F (175°C).
- Combine cookies and butter in a bowl. Mix well until crumbly, then press firmly into mini pie molds.
- Bake the crusts for 10 minutes. Set the molds aside to cool completely.
Filling
- Beat heavy cream, cream cheese, and powdered sugar in a separate bowl until smooth.
- Stir in melted chocolate, nuts, vanilla, and salt. Mix until fully incorporated.
- Spoon the chocolate filling into the cooled crusts until they are generously filled.
Chilling
- Chill the pies in the refrigerator for at least 2 hours before serving.
- Garnish if desired with additional nuts or chocolate shavings just before serving.
Notes
Prepare these pies ahead for family events or a cozy night in. Store in an airtight container for up to five days. Can freeze for up to three months.
