Ingredients

For the treats
  • 3 tablespoons unsalted butter Adds richness; you can use margarine if you want a dairy-free option.
  • 4 cups miniature marshmallows Creates that gooey texture; use regular marshmallows if you can’t find mini ones, but cut them down.
  • 6 cups Rice Krispies cereal The classic choice for crispiness; any puffed rice cereal can work in a pinch.
  • 1 cup semi-sweet chocolate chips Provides a sweet, chocolatey punch; dark or milk chocolate are great alternatives.

Method

Preparation
  1. In a large saucepan set over low heat, melt the butter, stirring continuously.
  2. Once melted, add in the marshmallows.
  3. Continue stirring until the marshmallows are completely melted with the butter, then remove from the stovetop.
  4. Pour in the Rice Krispies and stir until they are evenly coated with the melted marshmallow mixture.
  5. Add in the chocolate chips and stir to combine with the Krispies mixture; keep stirring until the chips have fully melted into the cereal and marshmallows.
  6. Line a 9x13-inch baking pan with wax paper or coat with butter for easy removal.
  7. Use a lightly sprayed rubber spatula to pour the Krispie mixture into the pan.
  8. Use the back of a spatula or a piece of wax paper over the treats to press into the pan gently. Feel free to sprinkle extra chocolate chips on top if desired.
  9. Allow the treats to cool and the marshmallows to set for about 30 minutes before cutting them into squares and serving.

Notes

Store in an airtight container at room temperature for up to a week. You can also freeze individual squares for up to three months. To revive staleness, pop them in the microwave for a few seconds.
