Preparation
  1. In a bowl, whisk together eggs, milk, vanilla extract, and cinnamon until well combined.
  2. Dip each slice of bread in the egg mixture, ensuring both sides are coated.
  3. In another bowl, combine sugar and cinnamon for the churro topping.
Cooking
  1. Heat melted butter in a skillet over medium heat.
  2. Cook each slice of dipped bread for 2-3 minutes on each side until golden brown.
  3. Immediately sprinkle the cinnamon-sugar mixture over both sides of the toast after cooking.
Serving

Notes

Use day-old bread for better absorption of the egg mixture. You can make the egg mixture ahead of time and refrigerate it overnight. Store leftovers in an airtight container for up to three days or freeze for up to three months.
