Ingredients
  

For the Chicken
  • 1.5 pounds boneless, skinless chicken breasts Consider using chicken thighs for extra flavor and moisture.
  • 2 tablespoons olive oil Avocado oil is a great substitute for a higher smoke point.
  • 1 tablespoon honey Maple syrup works as a vegan alternative.
  • 1/4 cup cilantro, chopped Parsley or basil can be used for a different note.
  • 1 teaspoon lime zest Lemon zest can be used as an alternative.
  • 2 tablespoons lime juice Fresh lemon juice can be a substitute if needed.
  • 1/4 teaspoon salt Adjust to taste.
  • 1/2 teaspoon pepper Freshly cracked black pepper is preferred.
  • 1/4 cup club soda (optional) Sparkling water works too.
For the Strawberry Salsa
  • 1 cup tomatoes, chopped small Heirloom or cherry tomatoes can be used for sweetness.
  • 1 cup strawberries, chopped small Mango or peaches can be used for a different twist.
  • 1 piece jalapeño pepper, chopped Omit seeds for less spice or substitute with bell pepper.
  • 5 pieces green onions, chopped Red onion can offer a sharper flavor.
  • 2 tablespoons lime juice (for salsa) Lemon juice can be used for variation.
  • 1/4 teaspoon salt (for salsa) Adjust according to your preference.
  • 1/2 teaspoon pepper (for salsa) Season to taste.

Method
 

Preparation
  1. In a blender, combine the cilantro lime chicken ingredients: olive oil, honey, chopped cilantro, lime zest, lime juice, salt, and pepper. Blend for about 30 seconds until smooth.
  2. Place each chicken breast between plastic wrap and gently pound until about ½ inch thick.
  3. Transfer the chicken to a large bowl and pour the cilantro lime marinade over it. Let marinate for about 20 minutes.
  4. For the strawberry salsa, toss all salsa ingredients in a bowl and refrigerate until ready to serve.
Cooking
  1. Preheat your grill and cook the chicken on both sides for approximately 3 to 4 minutes or until fully cooked.
  2. Serve the chicken topped with the vibrant strawberry salsa.

Notes

Don’t skip marinating the chicken—it’s essential for flavor and tenderness. For juicier chicken, let it rest for a few minutes after grilling before slicing. You can substitute different fruits in the salsa or add more jalapeño for extra heat.
