  • 1 cup Jasmine or Basmati rice Fluffy and fragrant rice base; replace with brown rice for extra fiber.
  • 1.5 cups vegetable broth, chicken broth, or water The liquid for cooking; stock enhances flavor significantly.
  • 1 bunch fresh spinach, stemmed Packed with nutrients; frozen spinach is a good alternative, but drain it well.
  • 1 bunch cilantro, stemmed For a fresh, herbal note; parsley is a great substitute if you’re not fond of cilantro.
  • 3 tablespoons lime juice Bright acidity; use fresh lime juice for the best taste.
  • 1 teaspoon kosher salt Essential for flavor; sea salt can also be a healthier alternative.
  • 1 optional Jalapeño For a kick of heat; omit if you’re making it kid-friendly.

Method
 

Preparation
  1. Heat olive oil to medium heat in a saucepan with a lid.
  2. Sauté the diced onion for around two minutes until slightly translucent.
  3. Stir in the garlic and sauté for an additional minute until fragrant.
  4. Increase heat to medium-high, add the rice, and cook for 1-2 minutes until lightly browned.
  5. Pour in the broth or water, raise heat to high, and bring to a boil.
  6. Reduce heat to low, cover, and let simmer for 15 minutes.
  7. Meanwhile, combine spinach, cilantro, lime juice, and salt in a food processor; blend until smooth.
  8. After cooking, remove the rice from heat and let it sit covered for five minutes without lifting the lid.
  9. Stir in the blended greens mixture to combine. Serve warm.

Notes

For leftovers, place the rice in an airtight container and refrigerate for up to three days. Reheat in the microwave or stovetop with a splash of broth to revive its flavors. You can freeze the rice in portions to enjoy later.
