Preparation
- Heat olive oil to medium heat in a saucepan with a lid.
- Sauté the diced onion for around two minutes until slightly translucent.
- Stir in the garlic and sauté for an additional minute until fragrant.
- Increase heat to medium-high, add the rice, and cook for 1-2 minutes until lightly browned.
- Pour in the broth or water, raise heat to high, and bring to a boil.
- Reduce heat to low, cover, and let simmer for 15 minutes.
- Meanwhile, combine spinach, cilantro, lime juice, and salt in a food processor; blend until smooth.
- After cooking, remove the rice from heat and let it sit covered for five minutes without lifting the lid.
- Stir in the blended greens mixture to combine. Serve warm.
Notes
For leftovers, place the rice in an airtight container and refrigerate for up to three days. Reheat in the microwave or stovetop with a splash of broth to revive its flavors. You can freeze the rice in portions to enjoy later.
