Ingredients

For the Marinade
  • 1 lb Flank steak Substitute with skirt steak or chicken if desired.
  • 1/4 cup Fresh lime juice Lemon juice can be used as an alternative.
  • 1/4 cup Fresh cilantro, chopped Use parsley as a substitute if not a fan of cilantro.
  • 2 tablespoons Olive oil Avocado oil or canola oil can also be used.
  • 2 cloves Garlic, minced Garlic powder can be a substitute.
  • Salt and pepper to taste Garlic salt can be used for extra flavor.
For Serving
  • Cooked rice or quinoa Brown rice or cauliflower rice are healthier options.
  • Toppings (e.g., avocado, corn, black beans, diced tomatoes, extra cilantro) Customize toppings to your preference.

Method

Marination
  1. In a bowl, whisk together lime juice, cilantro, olive oil, garlic, salt, and pepper.
  2. Marinate the flank steak in the mixture for at least 30 minutes.
Cooking
  1. Preheat grill or pan over medium-high heat.
  2. Cook the steak for about 4-5 minutes per side or until desired doneness is reached.
  3. Let steak rest for a few minutes before slicing.
Assembly
  1. Assemble bowls with rice or quinoa as the base, topped with sliced steak and your choice of toppings.
  2. Drizzle with extra lime juice and serve immediately.

Notes

Avoid skipping the marinade to enhance flavor. Letting the steak rest before cutting keeps it juicy. Use a meat thermometer for the perfect doneness.
