  • 1 cup cilantro (about 1 bunch) Adds a fresh, vibrant flavor; feel free to substitute parsley if you're not a cilantro fan.
  • 1 cup plain Greek yogurt Offers creaminess and protein; any plain yogurt will do if you prefer a lighter version.
  • 1 cup spinach (optional, but recommended) For additional nutrients and a greener hue; can be swapped with kale or omitted entirely.
  • 2 tsp lemon juice (about 1/2 a lemon) Enhances brightness; lime juice can serve as a fresh alternative.
  • 2 cloves garlic Provides essential flavor; adjust according to your garlic preference.
  • 1/2 tsp salt Brings out the sauce’s flavors; start with less and add to taste.
  • 1 tsp olive oil (optional) Adds silkiness to the sauce; can be omitted if desired.

Method
 

Preparation
  1. Juice the lemon until you have 2 teaspoons (about half a lemon) and add the juice to your food processor.
  2. Add the remaining ingredients into the processor.
  3. If you prefer a smoother texture, mince the garlic beforehand; however, this step can be skipped.
  4. Process until smooth and creamy, adjusting salt if needed.

Notes

Serve chilled to enhance flavors. Use leftover sauce as a marinade for chicken or tofu. Be cautious not to over-process the ingredients to avoid a watery consistency.
