Ingredients

Main Ingredients
  • 1.5 cups Mashed Bananas About 3-4 medium-sized bananas. The riper, the better for sweetness.
  • 0.5 cups Sugar Regular granulated sugar for sweetness.
  • 0.5 cups Brown Sugar Light or dark brown sugar works well here.
  • 0.5 tbsp Cinnamon The star spice that gives this bread its character.
  • 2 Large Eggs Can be substituted with flax eggs for a vegan version.
  • 0.5 cups Sour Cream Can be substituted with Greek yogurt if necessary.
  • 1.5 cups All Purpose Flour Whole wheat flour offers a healthier twist.
  • 2 tsp Baking Powder Essential for the rise.
  • 0.25 tsp Baking Soda Helps balance the acidity of the bananas and sour cream.
  • 0.5 tsp Kosher Salt Regular salt is an acceptable alternative.
  • 0.5 cups Vegetable Oil Adds moisture; can use melted butter for richer flavor.
  • 1.5 tsp Vanilla Extract Enhances overall taste. Almond extract is a good substitute.
  • 1 tbsp Cinnamon (for topping) Adds extra burst of flavor to the crust.
  • 0.5 cups Sugar (for topping) Sweetens the crust when sprinkled over the batter.

Method

Preparation
  1. Preheat your oven to 350 degrees F. Prepare a 9x5 inch loaf pan by lining it with parchment paper, allowing 2 inches to hang over the sides.
  2. In a large bowl, combine the mashed bananas, vegetable oil, both sugars, vanilla extract, eggs, and sour cream. Mix well using an electric hand mixer until smooth.
  3. Gradually add all-purpose flour, baking powder, baking soda, kosher salt, and cinnamon. Mix until just combined.
  4. In a small bowl, combine the topping ingredients: sugar and cinnamon.
  5. In your prepared loaf pan, pour half of the banana bread batter. Top with half of the cinnamon-sugar mixture. Pour the remaining batter over and sprinkle with the rest of the cinnamon-sugar topping.
Baking
  1. Bake in the preheated oven on the middle rack for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
Cooling
  1. Allow the banana bread to cool in the pan for about 30 minutes before carefully lifting it out using the parchment paper. Transfer it to a wire rack to cool completely.

Notes

Let the banana bread sit overnight before slicing for enhanced flavor. Can add mix-ins like nuts or chocolate chips for extra flavor.
