- Preheat oven to 375°F and grease a 12-cup muffin tin.
- Whisk flour, baking powder, and sugar in a large bowl. In a separate bowl, mix buttermilk, melted butter, egg, and vanilla.
- Combine both mixtures gently until just combined. Do not overmix.
- Drop batter halfway into muffin cups. Sprinkle brown sugar and cinnamon on each. Add more batter and swirl gently with a toothpick.
- Bake 18–20 minutes or until golden and cooked through. Let cool and optionally drizzle with glaze.
Notes
Avoid overmixing the batter, and try swirling gently with a skewer to create perfect pockets of cinnamon.
