Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.

  3. In another bowl, whisk together milk, vegetable oil, egg, and vanilla extract until smooth.
  4. Carefully pour the wet mixture into the dry ingredients, stirring until just combined.
  5. In a small bowl, mix brown sugar with melted butter and a sprinkle of cinnamon.
Assembly
  1. Fill each muffin liner halfway with batter. Add a teaspoon of the brown sugar mixture, and then top with more batter until almost full.
