Preparation
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a mixing bowl, mash the ripe bananas. Add the sugar and softened butter; mix until combined.
- Beat in the eggs and vanilla extract.
- Add the baking soda and salt, and mix.
- Gradually add the flour until just incorporated. Gently fold in the blueberries.
- Pour the batter into the prepared loaf pan and sprinkle the top with cinnamon sugar.
- Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool before slicing and serving.
Notes
For serving, pair with a pat of butter or whipped cream. Wrap tightly to store at room temperature for up to three days, or refrigerate for a few more days. Can be frozen for up to three months.
