Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, mash the ripe bananas. Add the sugar and softened butter; mix until combined.
  3. Beat in the eggs and vanilla extract.
  4. Add the baking soda and salt, and mix.
  5. Gradually add the flour until just incorporated. Gently fold in the blueberries.
  6. Pour the batter into the prepared loaf pan and sprinkle the top with cinnamon sugar.
  7. Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cool before slicing and serving.

Notes

For serving, pair with a pat of butter or whipped cream. Wrap tightly to store at room temperature for up to three days, or refrigerate for a few more days. Can be frozen for up to three months.
