Ingredients
  

Main Ingredients
  • 2 cups cooked chopped or shredded chicken Use rotisserie chicken for convenience.
  • 1/2 cup mayonnaise Use high-quality mayonnaise for best results.
  • 1 rib celery, diced Adds crunch to the salad.
  • 1 green onion thinly sliced Can be substituted with shallots for a milder flavor.
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon seasoned salt
  • 1/8 teaspoon black pepper
  • 1 teaspoon chopped fresh dill or 1/4 teaspoon dried dill Optional, but adds a fresh flavor.

Method
 

Preparation
  1. In a medium bowl, combine the cooked chicken, mayonnaise, diced celery, and green onion.
  2. Mix everything together well until well coated.
  3. Add the Dijon mustard, seasoned salt, black pepper, and dill (if using).
  4. Mix until everything is well combined.
  5. Chill in the refrigerator for about 30 minutes.
  6. Serve on bread, in a wrap, or atop a bed of greens.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. For variations, consider adding grapes for sweetness or swapping chicken for chickpeas for a vegetarian version.
