Ingredients

Potato Preparation
  • 2 pounds Yukon gold or Russet potatoes The base of your dish, contributing creaminess.
Flavor Base
  • 1/4 cup olive oil Adds richness and helps achieve that crispy exterior.
  • 1/4 cup fresh lemon juice Provides acidity and brightens the flavor.
  • 4 cloves garlic, minced Load up on flavor and aroma.
  • 2 teaspoons dried oregano A classic herb that pairs beautifully with potatoes.
  • to taste salt and pepper Essential for enhancing the dish's overall flavor.
Cooking Liquid
  • 1 cup vegetable or chicken broth Keeps the potatoes moist while roasting.
Garnish
  • to taste fresh parsley, optional Adds freshness and visual appeal.

Method

Preparation
  1. Preheat the oven to 400°F (200°C). Preheating ensures evenly cooked potatoes with a satisfying crisp.
  2. Peel and cut the potatoes into wedges for uniform sizes for even cooking and optimal crispness.
  3. In a large mixing bowl, combine olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Whisk until combined.
  4. Add the potato wedges to the bowl and toss to coat them evenly with the mixture.
  5. Place the coated potatoes in a single layer on a baking sheet. Overcrowding leads to steaming instead of roasting; use two sheets if necessary.
  6. Pour the vegetable or chicken broth around the potatoes in the baking sheet. This will keep the potatoes tender and moist throughout roasting.
Cooking
  1. Roast in the preheated oven for about 45-60 minutes, turning occasionally, until the potatoes are golden brown and crispy on the outside and tender on the inside.
  2. Garnish with fresh parsley before serving. This final touch adds color and a hint of freshness.

Notes

Tip: Substitute sweet potatoes for a unique taste. Adding cheese halfway through roasting can create a delightful topping. Experiment with fresh herbs like rosemary for a different flavor twist.
