  • 3/4 cup sugar
  • 2 eggs
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup milk or yogurt
  • 1 tsp vanilla extract

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Grease a standard 9x5-inch loaf pan and set aside.
  3. Cream together softened butter and sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition. Then stir in the vanilla extract.
  5. In a separate bowl, whisk together the flour, baking soda, and salt.
  6. Gradually add dry ingredients to the wet mixture, alternating with the milk (or yogurt). Mix just until combined.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the loaf to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Try adding lemon zest, mashed banana, or chocolate chips for variety. For a dairy-free option, use almond milk and coconut oil. This loaf also freezes beautifully—just slice and wrap individually. Want extra flair? Glaze with lemon icing or chocolate ganache.
