- Preheat your oven to 350°F (175°C).
- Grease a standard 9x5-inch loaf pan and set aside.
- Cream together softened butter and sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition. Then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add dry ingredients to the wet mixture, alternating with the milk (or yogurt). Mix just until combined.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the loaf to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
Try adding lemon zest, mashed banana, or chocolate chips for variety. For a dairy-free option, use almond milk and coconut oil. This loaf also freezes beautifully—just slice and wrap individually. Want extra flair? Glaze with lemon icing or chocolate ganache.
