Method
 

Preparation
  1. Preheat your oven to 350°F (177°C).
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a large mixing bowl, beat the softened butter until creamy. Add the brown sugar and granulated sugar, and mix until smooth.
  4. Beat in the egg, followed by peanut butter and vanilla.
  5. Gradually add the flour mixture, mixing until well combined.
  6. Chill the dough for at least one hour.
Baking
  1. Scoop dough into balls and roll in granulated sugar. Place on baking sheets three inches apart.
  2. Bake for 11-13 minutes until the tops are lightly cracked.
  3. Remove from the oven, gently press a chocolate kiss into each cookie, and allow them to cool.
  4. Optionally, freeze cookies for ten minutes to set the chocolate perfectly.

Notes

These cookies shine best when served warm but are also delicious at room temperature. Store in an airtight container at room temperature for up to a week. Freeze them in a single layer in an airtight container or freezer bag for up to three months.
