Preparation
  1. Preheat oven to 375°F (190°C).
  2. In a bowl, stir together flour, baking powder, and salt.
  3. In another bowl, cream together the butter and sugar until smooth.
  4. Beat in the egg, vanilla extract, and almond extract.
  5. Gradually blend the dry ingredients into the creamed mixture.
  6. Roll rounded teaspoonfuls of dough into balls, and place them onto ungreased cookie sheets.
  7. Flatten each ball with the bottom of a glass and sprinkle with sugar.
  8. Bake for 8 to 10 minutes in the preheated oven until golden.
  9. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

Chill the dough for at least 30 minutes for a more defined shape. Store cookies in an airtight container for up to a week or freeze for up to three months.
