Method
 

Preparation
  1. Preheat oven to 350°F (180°C) and line baking sheets with parchment paper or silicone baking mats.
  2. In a medium bowl, combine all-purpose flour, baking soda, baking powder, and salt; set aside.
  3. In a large mixer bowl, cream unsalted butter and both sugars together on medium speed until light in color and fluffy, about 2-3 minutes.
  4. Add the large egg to the mixture and mix until well combined.
  5. Incorporate the vanilla extract and mix until evenly blended.
  6. Add the dry ingredient mixture to the wet ingredients and mix until just combined; do not overmix.
Baking
  1. Using a rubber spatula, help the dough come together to form a cohesive ball.
  2. Shape the dough into balls about 1 1/2 tablespoons in size and roll them into balls.
  3. Roll each ball in additional sugar to coat before placing them on the baking sheets.
  4. Bake for 7-8 minutes, removing them when the edges are just beginning to turn golden.
  5. Let the cookies cool on the baking sheets for 4-5 minutes before transferring them to a wire rack to cool completely.

Notes

For optimal freshness, store your sugar cookies in an airtight container at room temperature. They will stay delicious for up to a week. Consider freezing the rolled dough balls for up to three months.
