Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Grease and line a loaf pan with parchment paper for easy removal.
Mixing Dry Ingredients
  1. In a bowl, whisk together flour, baking powder, baking soda, and salt.
Combining Wet Ingredients
  1. In another bowl, mix granulated sugar, lime zest, melted butter, neutral oil, eggs, coconut milk, Greek yogurt, lime juice, and coconut extract.
Combining Mixtures
  1. Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.
  2. Fold in sweetened shredded coconut until evenly distributed.
  3. Transfer the batter to the prepared loaf pan, smoothing the top with a spatula.
Baking
