  • 1 1/2 cups flour (plain/all-purpose) Forms the base; almond or whole wheat flour can be substituted for added nutrients.
  • 1 cup oats Adds texture and chewiness. Quick oats work just as well.
  • 3/4 cup unsweetened shredded coconut Provides a tropical flavor. Avoid flaked, as it’s too bulky.
  • 1/2 tsp baking powder Aids in rising, making the bars light. Ensure it’s fresh for best results.
  • 1/4 tsp kosher salt Enhances flavor; table salt works too.
Mango Filling Ingredients
  • 2 1/2 cups mango slices (5mm thin) The star ingredient, adds sweetness. Ripe, fresh mangoes are ideal.
  • 1 1/2 tsp cornstarch Helps thicken the filling. Arrowroot powder can be used as an alternative.
  • 2 tbsp white sugar Sweetens the mango filling; adjust based on mango sweetness.
Lime Glaze Ingredients
  • 3/4 cup soft icing sugar (powdered sugar) For the glaze; use a sugar alternative if preferred.
  • 1 tsp lime zest Imparts fresh flavor. Don’t skip, as it adds a citrusy aroma.
  • 3 tsp lime juice For the glaze, contributing acidity; add more to taste if desired.
  • 1/4 tsp vanilla extract Rounds out the flavors beautifully.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a baking pan (8'x8') and set it aside.
  2. In a bowl, cream together the unsalted butter and caster sugar until light and fluffy. This should take about 3 minutes using a hand mixer.
  3. Incorporate the large egg into the butter mixture, beating until well combined.
  4. In another bowl, whisk together the flour, oats, shredded coconut, baking powder, and salt.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
Baking the Base
  1. Press two-thirds of this mixture evenly into the bottom of the prepared baking pan to form your bar's crust.
  2. Bake for about 15 minutes until lightly golden.
Prepare the Filling
  1. While the base bakes, combine the mango slices, cornstarch, and white sugar in a saucepan over medium heat.
  2. Stir gently, cooking until the mango releases its juices and thickens slightly—about 5 minutes. Remove from heat and let cool.
Assemble and Bake
  1. Once the base is baked, pour the mango mixture over it, spreading it out evenly.
  2. Crumble the remaining dough over the top and bake for an additional 20-25 minutes, until golden brown on top.
Make the Lime Glaze
  1. After the bars are done baking, let them cool.
  2. In a small bowl, whisk together the powdered sugar, lime juice, and zest until smooth. Adjust the thickness with more lime juice or sugar as needed.
Glaze and Serve
  1. Drizzle the lime glaze over the cooled bars and allow it to set before cutting into squares or bars.
