Ingredients

Base Ingredients
  • 1 cup unsalted butter Can be substituted with coconut oil for a dairy-free option.
  • 1 cup packed brown sugar Light brown sugar works if you’re out of dark.
  • 2 cups all-purpose flour Whole wheat flour is a healthier alternative.
  • 1/4 teaspoon salt Balances sweetness.
  • 1 teaspoon vanilla extract Ensure it’s pure to avoid artificial taste.
Topping Ingredients
  • 1 cup shredded coconut Sweetened or unsweetened based on your preference.
  • 1 cup toffee bits Chocolate chips can replace toffee for a double chocolate treat.
  • 1 cup chocolate chips Use dark chocolate for a richer taste.

Method

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream the softened unsalted butter with packed brown sugar until smooth and fluffy, about 2-3 minutes.
  3. Gradually add the all-purpose flour and salt, mixing until just combined. Press the mixture evenly into the bottom of your greased 9x13-inch baking pan.
Baking
  1. Bake the base in the preheated oven for 15 minutes or until the edges are lightly golden.
  2. Remove from oven and evenly sprinkle the shredded coconut and toffee bits on top.
Chocolate Topping
  1. In a small saucepan over low heat, gently melt the chocolate chips along with the vanilla extract, stirring continuously until smooth.
  2. Carefully pour the melted chocolate over the coconut and toffee layer, spreading evenly with a spatula.
Final Steps
  1. Let the bars cool completely in the pan before slicing them into squares.

Notes

Allow to cool fully to achieve cleaner slices. For best results, line the baking pan with parchment paper for easy lifting.
