  • 4 large large eggs
  • 15 oz canned creamed corn
  • 1 cup frozen corn
  • 4 stalks green onions Chopped
  • 1 cup yellow corn meal
  • 1 cup sour cream
  • 1 cup pepper jack cheese Shredded
  • 1 cup cheddar cheese Shredded
  • 4 oz diced green chilies
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1 tsp pepper
  • 1/2 tsp red pepper flakes

Method
 

Preparation
  1. Preheat the oven to 325°F (163°C).
  2. Spray a 10” pie plate with cooking spray to prevent sticking.
  3. In a large bowl, whisk together the eggs until well combined and frothy.
  4. Incorporate the canned creamed corn, frozen corn, chopped green onions, yellow corn meal, sour cream, both cheeses, diced green chilies, Worcestershire sauce, salt, pepper, and red pepper flakes into the bowl.
  5. Stir everything together until well combined to ensure even distribution of flavors and textures.
  6. Transfer the mixture into the prepared pie plate, smoothing the top with a spatula.
Baking
  1. Place the dish in the oven and bake uncovered for 90 minutes, allowing the edges to become golden brown.
  2. Once baked, slice into wedges and serve plain or with your favorite toppings.

Notes

Ensure eggs are at room temperature for better mixing. Optional: Add smoked paprika for a smoky flavor. Allow to sit for a few minutes after baking for easier slicing.
