Preparation
  1. Preheat the oven to 325°F (163°C) to prepare for baking.
  2. Spray a 10” pie plate with cooking spray to prevent sticking.
  3. In a large bowl, whisk together the eggs until well combined and frothy.
  4. Incorporate the canned creamed corn, frozen corn, chopped green onions, yellow corn meal, sour cream, both cheeses, diced green chilies, Worcestershire sauce, salt, pepper, and red pepper flakes into the bowl.
  5. Stir everything together until well combined.
  6. Transfer the mixture into the prepared pie plate, smoothing the top with a spatula.
Baking
  1. Place the pie plate in the oven and bake uncovered for 90 minutes.
  2. Once baked, slice into wedges and serve plain or with your favorite toppings.

Notes

Ensure your eggs are at room temperature for better mixing and fluffiness. This pie can stick, so don’t skip the cooking spray. For a creamier texture, substitute some sour cream with crème fraîche.
