  • 1 medium Red Bell Pepper Can use yellow or orange peppers if preferred.
  • 1/2 medium Red Onion Opt for green onions for a milder flavor.
  • 2 tablespoons Olive Oil Avocado oil can also be used.
  • 2 tablespoons Lemon Juice Lime juice can be a good alternative.
  • to taste Salt and Pepper Adjust according to personal preference.
  • to taste Fresh Herbs Garnish with parsley or cilantro; dill also enhances flavor.

Preparation
  1. In a large bowl, combine the cottage cheese and chickpeas.
  2. Add the diced cucumber, red bell pepper, and red onion.
  3. Drizzle with olive oil and lemon juice, then season with salt and pepper.
  4. Mix gently until well combined.
  5. Garnish with fresh herbs.
  6. Serve immediately or refrigerate until ready to serve.

Notes

For best flavor, always use fresh ingredients. Don't skip rinsing canned chickpeas to reduce excess sodium. Overmixing will compromise texture.
