Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Mix in cottage cheese, eggs, honey, and vanilla extract until well combined.
  4. In another bowl, whisk together the dry ingredients: whole wheat flour, baking soda, baking powder, salt, and cinnamon.
  5. Gradually add the dry mixture to the wet mixture, stirring gently until just combined; do not overmix!
  6. Pour the batter into the prepared loaf pan and smooth the top.
Baking
  1. Bake for 50-60 minutes or until a toothpick comes out clean from the center of the loaf.
  2. Allow to cool for at least 15 minutes before slicing.

Notes

Serve warm or at room temperature, topped with yogurt or honey. Store in an airtight container for up to three days or refrigerate for about a week. Freeze individual slices wrapped in plastic for up to three months.
