  • 5 medium eggs Vegan options include flaxseed meal mixed with water as an egg replacement.
  • 2 tablespoons olive oil Melted coconut oil can be used instead for a different profile.
  • 1 tablespoon baking powder Ensure it’s fresh to achieve optimal rise.
  • 3/4 teaspoon fine kosher salt Sea salt works well, too.

Method
 

Preparation
  1. Preheat the oven to 350°F and line a 9 x 5-inch bread pan with parchment paper or grease it lightly.
  2. In your food processor, combine the rolled oats and process until they are mostly fine, creating a flour-like consistency.
  3. Add the cottage cheese, ground flaxseed, eggs, olive oil, baking powder, and salt to your processed oats. Blend until the mixture is smooth and well incorporated.
Baking
  1. Pour the batter into your prepared loaf pan and bake for about 60 minutes, or until a toothpick inserted in the center comes out clean.
  2. Allow the bread to cool completely on a cooling rack before slicing to ensure clean cuts and perfect texture.

Notes

Avoid over-processing the oats and ensure the cottage cheese is strained to prevent a wet batter. Experiment with seasonings or add sweetness like chocolate chips if desired. This bread is great for meal prep and freezing.
