Preparation
  1. Preheat your oven to 350°F (175°C) to ensure it’s ready for baking once your mixture is prepared.
  2. In a mixing bowl, combine the cottage cheese and eggs, whisking until well blended.
  3. Stir in the diced bell peppers, chopped green onions, garlic powder, salt, and pepper.
  4. If you like a cheesy texture, fold in the shredded cheese.
  5. Grease a muffin tin or use silicone molds.
  6. Pour the egg mixture evenly into the muffin tin, filling each section just below the rim.
Baking
  1. Bake for about 20-25 minutes, or until the egg bites are set and slightly golden on top.
