Preparation
  1. In a bowl, mix the cottage cheese, flour, baking powder, and salt until just combined. The mixture should start clumping together into a rough dough.
  2. Drizzle in the olive oil and mix until a dough forms. The healthier fat contributes to the silkiness of the flatbread.
  3. If the dough is too dry, add water a little at a time until it reaches the right consistency. Aim for a soft but not sticky dough that holds together.
  4. Divide the dough into small balls and roll each into flat disks. The thickness can vary depending on personal preference, but about 1/4 inch is a good starting point.
Cooking
  1. Heat a non-stick skillet over medium heat and cook each flatbread for 2–3 minutes on each side or until golden brown and cooked through.

Notes

Store leftovers in an airtight container at room temperature for up to 2 days. Reheat on a skillet for the best texture. Freezing is an option for up to three months.
