- In a bowl, mix the cottage cheese, flour, baking powder, and salt until just combined. The mixture should start clumping together into a rough dough.
- Drizzle in the olive oil and mix until a dough forms. The healthier fat contributes to the silkiness of the flatbread.
- If the dough is too dry, add water a little at a time until it reaches the right consistency. Aim for a soft but not sticky dough that holds together.
- Divide the dough into small balls and roll each into flat disks. The thickness can vary depending on personal preference, but about 1/4 inch is a good starting point.
Cooking
- Heat a non-stick skillet over medium heat and cook each flatbread for 2–3 minutes on each side or until golden brown and cooked through.
- Enjoy the flatbreads warm, optionally topped with herbs or additional cheese. They’re perfect for serving with a side salad or as wraps for your favorite fillings.
Notes
Store leftovers in an airtight container at room temperature for up to 2 days. Reheat on a skillet for the best texture. Freezing is an option for up to three months.
