Preparation
- Preheat the oven to 375°F.
- Cook the lasagna noodle sheets according to package directions until al dente. Drain and drizzle with a little olive oil to prevent sticking.
- In a large pan, heat the olive oil over medium-high heat. Add the diced onion and garlic, sautéing for 5-7 minutes until softened and fragrant.
- Stir in the marinara sauce and season with kosher salt and pepper. Let the sauce simmer gently for 10 minutes.
- To make the cheese blend, in a food processor, combine cottage cheese, 3 cups of mozzarella cheese, the egg, grated parmesan, spinach, Italian seasoning, sea salt, and pepper. Blend until almost smooth.
Assembly and Cooking
- To assemble the lasagna in a 9×13 baking dish, spread half a cup of sauce at the bottom. Lay down three lasagna noodles without overlapping, followed by sauce and a layer of the cheese blend.
- Repeat these layers until all ingredients are used, ending with sauce topped with remaining mozzarella.
- Bake for 45 minutes or until bubbly and golden brown on top. Garnish with freshly chopped parsley before serving.
