  • 12 sheets lasagna noodle sheets Use gluten-free or whole wheat if needed; cook al dente.

  • 6-8 cloves garlic (minced) Adjust according to preference.
  • 24 ounces jar marinara sauce Choose a high-quality brand or homemade.
  • 20 ounces cottage cheese High-protein and low-fat option.
  • 4 cups shredded mozzarella cheese (divided) Save some for topping.
  • 1 large egg Helps bind the cheese filling.
  • 1 cup grated parmesan cheese Adds complexity to the cheese blend.
  • 3 cups packed spinach Frozen works; thaw and squeeze out liquid.
  • 2 teaspoons Italian seasoning Consists of oregano, basil, and thyme.

Method
 

Preparation
  1. Preheat the oven to 375°F.
  2. Cook the lasagna noodle sheets according to package directions until al dente. Drain and drizzle with a little olive oil to prevent sticking.
  3. In a large pan, heat the olive oil over medium-high heat. Add the diced onion and garlic, sautéing for 5-7 minutes until softened and fragrant.
  4. Stir in the marinara sauce and season with kosher salt and pepper. Let the sauce simmer gently for 10 minutes.
  5. To make the cheese blend, in a food processor, combine cottage cheese, 3 cups of mozzarella cheese, the egg, grated parmesan, spinach, Italian seasoning, sea salt, and pepper. Blend until almost smooth.
Assembly and Cooking
  1. To assemble the lasagna in a 9×13 baking dish, spread half a cup of sauce at the bottom. Lay down three lasagna noodles without overlapping, followed by sauce and a layer of the cheese blend.
  2. Repeat these layers until all ingredients are used, ending with sauce topped with remaining mozzarella.
  3. Bake for 45 minutes or until bubbly and golden brown on top. Garnish with freshly chopped parsley before serving.

Notes

Ensure noodles are not overcooked; they should be al dente. Avoid too much sauce to prevent sogginess.
