- Boil the pasta in salted water until just al dente. Reserve ½ cup pasta water before draining.
- Blend cottage cheese with ¼ cup of reserved pasta water until smooth and creamy.
- Return the pasta to the pot over low heat. Stir in the blended cottage cheese mixture.
- Add shredded cheddar cheese. Stir until melted and smooth. Add more pasta water if needed.
- Season with salt, pepper, and garlic powder if using. Adjust to taste.
- Serve warm immediately, or cover and keep warm. Optionally stir in a pat of butter.
Notes
Customize with seasonal vegetables like peas or roasted squash. Blend the cottage cheese for a smooth base and don’t forget to reserve pasta water. Avoid freezing leftovers — the texture may turn grainy.
