  • 8 oz elbow macaroni (or other short pasta)
  • 1 cup cottage cheese (full-fat recommended)
  • 1 cup shredded sharp cheddar cheese
  • 0.5 cup reserved pasta water (divided)
  • 0.25 tsp salt (adjust to taste)
  • 0.25 tsp black pepper (freshly ground)
  • 0.25 tsp garlic powder (optional)
  • 1 tbsp butter (optional, for silkiness)

Method
 

  1. Boil the pasta in salted water until just al dente. Reserve ½ cup pasta water before draining.
  2. Blend cottage cheese with ¼ cup of reserved pasta water until smooth and creamy.
  3. Return the pasta to the pot over low heat. Stir in the blended cottage cheese mixture.
  4. Add shredded cheddar cheese. Stir until melted and smooth. Add more pasta water if needed.
  5. Season with salt, pepper, and garlic powder if using. Adjust to taste.
  6. Serve warm immediately, or cover and keep warm. Optionally stir in a pat of butter.

Notes

Customize with seasonal vegetables like peas or roasted squash. Blend the cottage cheese for a smooth base and don’t forget to reserve pasta water. Avoid freezing leftovers — the texture may turn grainy.
