Preparation
- Preheat oven to 425°F (220°C). Spray a baking sheet with cooking spray and set aside.
- In a mixing bowl, place the flour, baking powder, salt, and blended cottage cheese (or yogurt).
- Using a silicone spatula or wooden spoon, stir until all ingredients are combined.
- With your hands, press the mixture together until a ball is formed.
- Transfer the dough to a floured work surface, then knead until smooth. The dough should feel dry, not sticky.
- Dust the surface and the dough ball with more flour, then roll out to form a thin crust about 10 inches round or ⅛ inch thick.
- Carefully transfer the crust to the prepared baking sheet. Place it in the oven and bake for 10 minutes.
Topping and Baking
- After parbaking, remove the crust from the oven and top it with pizza sauce, mozzarella cheese, Parmesan cheese, and pepperoni.
- Return to the oven and bake for an additional 7-8 minutes or until the crust begins to brown on the bottom.
- Top with crushed red pepper as desired and serve warm.
Notes
For best results, ensure dough is adequately kneaded and do not overload on toppings. Pairs well with a fresh salad.
