  • ½ cup all-purpose flour Whole wheat flour can be used for a healthier option.
  • ½ teaspoon baking powder Ensures a light texture.
  • ½ teaspoon sea salt Kosher salt can serve as a substitute.
  • ½ cup 2% blended cottage cheese Plain Skyr yogurt or Greek yogurt can be used for a different flavor.
Topping Ingredients
  • cup pizza sauce Can be homemade or store-bought.
  • ½ cup shredded mozzarella cheese Sprinkle more for extra cheesiness.
  • 1 tablespoon grated Parmesan cheese Can be omitted if desired.
  • 1 oz. sliced pepperoni Feel free to try turkey pepperoni or veggies for a healthier twist.

Method
 

Preparation
  1. Preheat oven to 425°F (220°C). Spray a baking sheet with cooking spray and set aside.
  2. In a mixing bowl, place the flour, baking powder, salt, and blended cottage cheese (or yogurt).
  3. Using a silicone spatula or wooden spoon, stir until all ingredients are combined.
  4. With your hands, press the mixture together until a ball is formed.
  5. Transfer the dough to a floured work surface, then knead until smooth. The dough should feel dry, not sticky.
  6. Dust the surface and the dough ball with more flour, then roll out to form a thin crust about 10 inches round or ⅛ inch thick.
  7. Carefully transfer the crust to the prepared baking sheet. Place it in the oven and bake for 10 minutes.
Topping and Baking
  1. After parbaking, remove the crust from the oven and top it with pizza sauce, mozzarella cheese, Parmesan cheese, and pepperoni.
  2. Return to the oven and bake for an additional 7-8 minutes or until the crust begins to brown on the bottom.
  3. Top with crushed red pepper as desired and serve warm.

Notes

For best results, ensure dough is adequately kneaded and do not overload on toppings. Pairs well with a fresh salad.
