  1. In a medium bowl, whisk together the eggs, cottage cheese, and a pinch of salt and pepper until well-combined.
  2. In a large heavy-duty skillet, heat the butter over medium heat until it’s melted and bubbling, making sure not to burn it.
Cooking
  1. Pour in the egg mixture and let it cook without stirring for a few seconds.
  2. As the edges begin to set, gently stir with a rubber spatula, folding the edges toward the center.
  3. When the eggs are almost set but still slightly runny, remove them from the heat and transfer to a serving plate; they will continue to cook from the residual heat.
