- In a medium bowl, whisk together the eggs, cottage cheese, and a pinch of salt and pepper until well-combined.
- In a large heavy-duty skillet, heat the butter over medium heat until it’s melted and bubbling, making sure not to burn it.
Cooking
- Pour in the egg mixture and let it cook without stirring for a few seconds.
- As the edges begin to set, gently stir with a rubber spatula, folding the edges toward the center.
- When the eggs are almost set but still slightly runny, remove them from the heat and transfer to a serving plate; they will continue to cook from the residual heat.
Notes
Don’t rush the cooking process; allowing the eggs to set before stirring will give you that coveted fluffy texture. Serve alongside whole-grain toast or seasonal vegetables for a hearty meal.
