Ingredients
  

Pasta and Chicken
  • 8 oz linguine
  • 2 pieces chicken breasts, cooked and shredded You can use rotisserie chicken for ease!
Sauce and Vegetables
  • 1/2 cup Cowboy Butter
  • 1/2 cup cherry tomatoes, halved Fresh, ripe tomatoes work best.
  • 1/4 cup fresh parsley, chopped Adds a lovely freshness!
  • Salt and pepper to taste
For Serving
  • Grated Parmesan cheese Optional but recommended!

Method
 

Preparation
  1. Cook the linguine according to package instructions, then drain and set aside.
  2. In a large skillet, melt the Cowboy Butter over medium heat.
  3. Add the cooked chicken and halved cherry tomatoes, stirring gently to combine.
  4. Toss the cooked linguine into the skillet, coating it in the buttery goodness.
  5. Season with salt and pepper to taste.
  6. Garnish with fresh parsley and serve immediately, optionally adding grated Parmesan cheese.

Notes

Store leftovers in an airtight container in the fridge for about three days. Reheat gently with a splash of broth or milk.
