Ingredients

Main Ingredients
  • 1 pound baby potatoes Juicy and tender; substitute with fingerling potatoes for a similar texture.
  • 1/2 cup butter, melted Rich flavor; can substitute with olive oil for a healthier alternative.
  • 2 cloves garlic, minced Fresh garlic adds zest; garlic powder suffices in a pinch.
  • 1 tablespoon fresh parsley, chopped Adds fresh flavor; dried parsley can work too, but use less.
  • 1 teaspoon paprika Sweet and smoky; swap with cayenne for heat.
  • 1 teaspoon onion powder Enhances flavor; try shallot powder for a more delicate taste.
  • 1/2 teaspoon salt Adjust to taste.
  • 1/4 teaspoon black pepper Adds warmth; swap with white pepper for milder taste.

Method

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Wash and halve the baby potatoes.
  3. In a bowl, mix the melted butter, garlic, parsley, paprika, onion powder, salt, and pepper.
  4. Toss the potatoes in the butter mixture until well coated.
  5. Spread the potatoes on a baking sheet in a single layer.
Cooking
  1. Bake for 25-30 minutes, or until the potatoes are golden and tender, stirring halfway through.
  2. Serve warm and enjoy!

Notes

For extra crispiness, broil the potatoes for 2-3 minutes after baking. Let leftovers cool completely before storing to retain texture.
