Ingredients
  

Fresh Ingredients
  • 6 pieces Roma tomatoes, diced Substitute with cherry tomatoes for a more vibrant flavor.
  • 1 piece bell pepper, diced Any color; use a sweet pepper or a poblano for a smoky twist.
  • 1 medium onion, finely diced Red onion offers a milder flavor.
  • 2 pieces jalapeño peppers, seeded and finely diced Omit if you prefer no spice.
  • 1 large avocado, peeled, pitted, and diced Substitute with cubed mango for sweetness.
  • 15 oz can corn, drained Using fresh corn off the cob gives a delightful crunch.
  • 15 oz can black beans, well rinsed and drained For freshness, cook your own beans or use chickpeas.
  • 1/2 bunch cilantro, chopped Parsley can work as a non-spicy substitute.
Dressing and Seasoning
  • 3-4 Tbsp lime juice Lemon juice is a great alternative.
  • 1/2 cup light Italian Dressing Substitute with a lime vinaigrette for a fresh kick.
  • 4 medium garlic cloves, pressed Use garlic powder in a pinch.
  • 1 tsp sea salt Seasoning blends also add unique flavor profiles.

Method
 

Preparation
  1. In a large mixing bowl, combine diced tomatoes, chopped onion, diced bell pepper, seeded and diced jalapeño, diced avocado, drained corn, rinsed and drained black beans, and chopped cilantro.
Mixing
  1. Stir in lime juice, Italian dressing, pressed garlic, and salt. Mix everything together and serve with tortilla chips.

Notes

For best flavor, let it sit in the fridge for about 30 minutes before serving. Store in an airtight container and consume within 3 to 4 days. Separate avocado until just before serving to prevent browning.
