Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy, about 3 to 5 minutes.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In another bowl, combine the flour, baking soda, and salt, then gradually add this to the creamed mixture.
  5. Stir in the oats, chocolate chips, nuts, and shredded coconut until evenly distributed.
  6. Drop tablespoonfuls of the cookie dough onto ungreased baking sheets, spacing them to allow for spreading.
Baking
  1. Bake for 10 to 12 minutes, or until the edges are golden brown.
  2. Let the cookies cool on the sheets for a few minutes before transferring them to wire racks to cool completely.

Notes

These cookies freeze beautifully. Place them in a single layer on a baking sheet to freeze for 1-2 hours before transferring them to a freezer-safe bag. They can be stored in the freezer for up to three months.
