  • 1 lb Chicken Breast (tenderloins optional) Use tenderloins for a more delicate bite.
  • 1 cup Flour Can be substituted with gluten-free flour.
  • 2 large Eggs For binding the breading.
  • 1 cup Breadcrumbs Use panko for extra crunch or crushed cornflakes for a different texture.
  • 2 tsp Paprika Part of the seasoning blend.
  • 1 tsp Garlic Powder Part of the seasoning blend.
  • 1 tsp Salt Part of the seasoning blend.
  • 1 tsp Black Pepper Part of the seasoning blend.
  • 2 cups Vegetable Oil For frying; peanut oil works beautifully.

Method
 

Preparation
  1. Preheat the oil in a deep fryer to 350°F (175°C).
  2. In a bowl, mix the flour and seasoning blend together.
Breading
  1. Dip each chicken tender in the flour mixture.
  2. Then dip in the beaten eggs.
  3. Finally, coat with breadcrumbs.
Frying
  1. Carefully place the coated chicken tenders in the hot oil.
  2. Fry until golden brown, about 5-7 minutes.
  3. Remove from oil and drain on paper towels.
Serving
  1. Serve hot with your choice of dipping sauce.

Notes

Serve with homemade honey mustard, ranch, or spicy chipotle mayo. Store in an airtight container for 3-4 days or freeze for up to 3 months.
