  • 1 medium Onion Can use yellow or white onions.
  • 2 cloves Garlic Mince to release flavor.
  • 4 cups Vegetable or Chicken Broth Use low-sodium if desired.
  • 1/2 cup Heavy Cream Can substitute with a dairy-free version if needed.
  • to taste Salt and Pepper Essential for seasoning.
  • 2 tablespoons Olive Oil or Butter Used for sautéing.
  • 2 tablespoons Fresh Parsley For garnish.

Method
 

Preparation
  1. Rinse and chop the celery into small pieces.
  2. Dice the onion and mince the garlic.
  3. Gather all ingredients and have your broth within reach for easy cooking.
Cooking
  1. In a large pot, heat olive oil or butter over medium heat.
  2. Sauté the onion until translucent, about 3-4 minutes.
  3. Add garlic and celery, stirring for about 5 minutes until the celery becomes tender.
  4. Pour in the broth, then bring to a gentle boil.
  5. Simmer for about 15 minutes until all veggies are soft.
Serving
  1. Blend the soup until smooth using a hand blender or a countertop blender.
  2. Stir in the heavy cream and adjust seasoning to taste.
  3. Ladle into bowls and garnish with fresh parsley before serving.

Notes

For an extra creamy soup without cream, add silken tofu and blend until smooth. Store leftovers in airtight containers for up to 4 days.
