Method
 

Preparation
  1. Wilt the spinach. Use a microwave-safe bowl, cover the spinach with a damp paper towel, and microwave for about 2 minutes. Set aside.
  2. In a large skillet, melt butter over medium-high heat, add diced onion, and cook until softened, about 4 minutes. Add minced garlic and cook for an additional minute.
  3. Stir in cream cheese, milk, heavy cream, Parmesan, salt, and pepper. Cook, stirring, until the cheese is melted, about 1-2 minutes.
  4. Add wilted spinach to the sauce and simmer for 3-5 minutes or until the sauce thickens to your liking. Adjust seasoning as desired.
  5. For a crispy top, broil for 2-4 minutes until lightly browned (optional).
  6. Serve immediately, garnished with freshly shaved Parmesan.

Notes

For best results, start with fresh spinach, don't over-brown onions and garlic, and adjust seasoning after thickening sauce. Serve immediately for the best texture.
