Preparation
- In a small bowl, combine 1 tablespoon Cajun seasoning and 1 teaspoon black pepper. Rub the mixture onto both sides of the chicken pieces for a flavorful base.
- In a large skillet over medium-high heat, heat 1 tablespoon olive oil and 1 tablespoon unsalted butter. Add the seasoned chicken and cook for about 3 minutes on each side until just seared but not fully cooked. Remove the chicken from the pan and set aside.
Cooking
- In the same pan, add 0.5 cup chopped onion and 3 teaspoons minced garlic. Sauté for about 2-3 minutes until the onion is tender and fragrant.
- Whisk 2 tablespoons all-purpose flour into the pan to create a paste. Slowly pour in 1 cup chicken broth and 1 cup heavy whipping cream, stirring continuously until combined. Add the remaining 1 tablespoon Cajun seasoning and mix well.
- Lower the heat to medium-low, add the seared chicken back to the skillet, and cook for an additional 5-8 minutes until fully cooked and the sauce has thickened. Season with salt if needed.
- Garnish the dish with fresh grated Parmesan cheese and a sprinkle of red pepper flakes if desired, then serve warm and enjoy.
Notes
For additional flavor, marinate the chicken in Cajun seasoning for a few hours before cooking. If you prefer a healthier version, substitute heavy cream with Greek yogurt for creaminess without the calories. Serve with rice or pasta to soak up the flavorful sauce.
