Method
 

Preparation
  1. In a small bowl, combine 1 tablespoon Cajun seasoning and 1 teaspoon black pepper. Rub the mixture onto both sides of the chicken pieces for a flavorful base.
  2. In a large skillet over medium-high heat, heat 1 tablespoon olive oil and 1 tablespoon unsalted butter. Add the seasoned chicken and cook for about 3 minutes on each side until just seared but not fully cooked. Remove the chicken from the pan and set aside.
Cooking
  1. In the same pan, add 0.5 cup chopped onion and 3 teaspoons minced garlic. Sauté for about 2-3 minutes until the onion is tender and fragrant.
  2. Whisk 2 tablespoons all-purpose flour into the pan to create a paste. Slowly pour in 1 cup chicken broth and 1 cup heavy whipping cream, stirring continuously until combined. Add the remaining 1 tablespoon Cajun seasoning and mix well.
  3. Lower the heat to medium-low, add the seared chicken back to the skillet, and cook for an additional 5-8 minutes until fully cooked and the sauce has thickened. Season with salt if needed.
  4. Garnish the dish with fresh grated Parmesan cheese and a sprinkle of red pepper flakes if desired, then serve warm and enjoy.

Notes

For additional flavor, marinate the chicken in Cajun seasoning for a few hours before cooking. If you prefer a healthier version, substitute heavy cream with Greek yogurt for creaminess without the calories. Serve with rice or pasta to soak up the flavorful sauce.
