Ingredients
  

  • 2 large boneless skinless chicken breasts
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 0.5 cup grated parmesan cheese
  • 1 cup chicken broth
  • 8 oz pasta (penne or fettuccine)
  • 1 tablespoon butter
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Equipment

  • tongs for tossing pasta and chicken in sauce

Method
 

  1. Toss sliced chicken with Cajun seasoning.
  2. Heat oil in skillet. Sear chicken until golden and cooked through. Set aside.
  3. Add butter and garlic to skillet. Cook until fragrant. Pour in chicken broth and cream. Whisk to combine.
  4. Add parmesan and simmer until sauce thickens.
  5. Cook pasta in salted water. Drain and reserve ½ cup pasta water.
  6. Add cooked pasta and chicken to sauce. Toss and adjust with pasta water if needed.
  7. Garnish with parsley and serve hot.

Notes

For a lighter version, use half-and-half instead of heavy cream and reduce the parmesan. To make it dairy-free, try coconut milk and nutritional yeast.
