Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine cooked chicken, sliced bell peppers, sliced onion, drained diced tomatoes, sour cream, cream of chicken soup, chili powder, cumin, garlic powder, onion powder, and salt and pepper. Mix until well combined.
  3. Pour the chicken mixture into a greased 9x13-inch baking dish and spread it out evenly.
  4. Sprinkle the shredded cheese evenly over the top of the chicken mixture.
Cooking
  1. Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
  2. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  3. Remove the casserole from the oven and sprinkle the crushed tortilla chips on top.
  4. Optionally garnish with fresh cilantro before serving. Serve warm.

Notes

Mistakes to Avoid: Monitor closely after removing the foil to achieve the perfect melted cheese without drying out. Taste test the mixture before baking and adjust spices as needed.
