Preparation
  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. In a medium saucepan, combine the rinsed rice, coconut milk, water, sugar, and salt.
Cooking
  1. Bring to a boil over medium-high heat.
  2. Once boiling, reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is tender and the liquid is absorbed.
  3. Remove from heat and let sit covered for 5 minutes.
  4. Fluff the rice with a fork and stir in the vanilla extract.
  5. Serve warm, garnished with shredded coconut if desired.
