  • 1/4 cup Sugar Adjust according to taste.
  • 1/2 cup Melted butter Coconut oil can be used for vegan diets.
For the filling
  • 16 oz Cream cheese Use full-fat variety for richness.
  • 1 cup Granulated sugar Can substitute with coconut sugar.
  • 1/2 cup Sour cream Greek yogurt is a healthier alternative.
  • 3 large Eggs Flax eggs can be used for a vegan option.
  • 2 tbsp Instant espresso powder Can substitute with cold brew concentrate.
  • 1 tsp Vanilla extract Use pure for a more intense flavor.

Method
 

Preparation of the crust
  1. Combine the graham cracker crumbs, melted butter, and sugar in a bowl.
  2. Press the mixture firmly into the bottom of a springform pan.
Preparation of the filling
  1. In a large bowl, beat the cream cheese until smooth.
  2. Gradually add the sugar, then mix in the sour cream, eggs, and espresso powder until creamy.
Final assembly
  1. Pour the filling over the prepared crust.
  2. Bake in a water bath for even cooking.
  3. Allow to cool and then chill before serving.

Notes

Overbeating the batter can lead to cracks. Be sure to let ingredients reach room temperature for a lump-free filling. Chill overnight for the best flavor.
