- In a large bowl, combine the sliced cucumbers.
- In a separate bowl, whisk together the Greek yogurt, olive oil, lemon juice, minced garlic, salt, and pepper until smooth.
- Pour the yogurt dressing over the cucumbers and toss until well coated.
- Chill in the refrigerator for at least 30 minutes.
- Serve chilled, garnished with fresh dill.
Notes
Serve with grilled chicken for a complete meal. This salad is best within a couple of days but can last up to five. Pair with barbecued meats or as a light lunch with whole grain bread.
