  • 1 large Cauliflower the star of the show; try broccoli or a mix if preferred.
  • 1 medium Onion adds depth; shallots work too.
  • 2 cloves Garlic for flavor; leeks can be a milder alternative.
  • 4 cups Vegetable broth a rich base; chicken broth is a great substitute.
  • 1 cup Heavy cream adds creaminess; swap with coconut milk for a dairy-free version.
  • to taste Salt general seasoning; try adding smoked salt for a twist.
  • to taste Pepper general seasoning.

Method
 

Preparation
  1. Place all soup ingredients (except salt and pepper) in a large pot over high heat and bring to a boil.
  2. Turn down to medium and let it simmer for 10 to 15 minutes or until the cauliflower is very soft.
  3. Blend until smooth with a handheld blender.
  4. Add salt and pepper to taste, adjusting for flavor.
  5. If the soup is too thick for your taste, add more milk, water, or stock with additional salt if needed. For a thicker consistency, simmer further.
  6. Serve, garnished with fresh thyme leaves and drizzled with cream or olive oil, if desired.

Notes

Pair with crusty homemade bread for dipping. Garnish with crispy bacon bits or roasted chickpeas for added texture. Store leftovers in an airtight container in the fridge for 3-5 days. You can freeze the soup in portioned freezer bags for later use.
