Cooking Instructions
  1. Add the oil, butter, and onion to a pot over medium-high heat. Sauté the onion for 3-4 minutes until translucent.
  2. Stir in the garlic, Italian seasoning, and orzo. Cook for 2-3 minutes, stirring often to infuse the orzo with flavor and toast it slightly.
  3. Pour in the chicken broth and cream. Once it starts to bubble, let it simmer for 10 minutes, uncovered, stirring fairly often to avoid sticking.
  4. After 10 minutes, take the pot off the heat and stir in the parmesan and spinach. Cover the pot for 3-5 minutes or until it thickens to your liking.

Notes

Adjust the creaminess by adding more or less cream to fit your taste. Store leftovers in an airtight container in the fridge for up to three days or freeze for up to two months.
