Preparation
  1. Preheat your oven and roast the walnuts until fragrant. Chop finely for the crust and coarsely for the topping.
Crust
  1. Combine cookie crumbs with melted butter and finely chopped walnuts. Press into the bottom of a springform pan and bake until golden.
Filling
  1. In a mixing bowl, beat softened cream cheese and goat cheese until smooth. Gradually incorporate sugar, sour cream, vanilla, and eggs.
  2. Mix until all is silky and creamy—be careful not to overbeat.
Baking
  1. Pour the filling over the crust and bake in a water bath until set. Let it cool gradually in the oven to avoid cracks.
Topping
  1. Drizzle honey over the cheesecake and sprinkle with coarsely chopped walnuts once cooled.
