  • 8-12 ounces Habanero Peppers, chopped Star of the show; can be substituted with jalapeƱos for a milder version.
  • 1 small Onion, chopped (about 4 ounces) Adds depth; yellow onions are the best choice for sweetness.
  • 4-5 cloves Garlic Provides rich flavor; can be adjusted based on your preference for garlic intensity.
  • 1/2 cup Neutral Oil (avocado or canola) Binds the sauce; use more as needed.
  • 1 teaspoon Salt Enhances flavor; always taste before adding more.

Method
 

Preparation and Cooking
  1. Add the habaneros, onion, garlic, and oil to a small pot or saucepan.
  2. Cover and simmer over medium-low heat for about 15 minutes or until the peppers and onions soften.
  3. Allow the mixture to cool slightly, then transfer everything to a food processor.
  4. Add the salt, process on high for 4-5 minutes, until smooth and clinging to the processor sides.
  5. If too thick, drizzle in more oil, or add water/lime juice a tablespoon at a time to achieve your desired consistency.
  6. Adjust salt to taste and enjoy.

Notes

For extra tang, add a squeeze of lime juice. Let it rest in the fridge for an hour to meld the flavors even better. Store in an airtight container; lasts about 1 week in the fridge or can be frozen for up to 3 months.
